Cornmeal Crunch Zucchini Rounds

This healthy snack is extremely easy to make, and it will induce even picky kids to eat their veggies!

  • 4 medium zucchinis, cut into ¼-inch thick rounds (4 cups sliced zucchini)
  • 1 teaspoon garlic granules
  • 1 ¼ teaspoons seasoned salt
  • ½ teaspoon black pepper
  • ¼ cup Bow & Arrow Brand Indian cornmeal
  • Olive oil spray

1. Preheat your oven to 400° F.
2. Spray a baking sheet with olive oil and lay the zucchini out on it in a single layer.
3. Sprinkle the zucchini evenly with the garlic, salt, pepper, and cornmeal. Spray the tops well with the olive oil spray. Bake for about ten minutes.
4. Flip each piece over and spray well with oil again. Continue to bake for another ten minutes, or until nicely browned on both sides. Serve immediately.
