Pioneer Pancakes

This healthy breakfast treat is a nice change of pace from regular pancakes.

  • ½ cup plus 2 tablespoons Bow & Arrow Brand yellow cornmeal
  • ¼ teaspoon sea salt
  • 2 tablespoons coconut sugar
  • ½ cup water
  • 2 tablespoons nondairy milk, unsweetened
  • 1 teaspoon vanilla (unless you’re using vanilla flavored milk)

For Pan-Frying: Non-virgin coconut oil (or sunflower oil), as needed
Toppings: Vegan margarine and maple syrup

Instructions:
1. Combine the cornmeal, sea salt, and sugar in a bowl and stir well to combine.
2. Boil the water and stir it into the dry ingredients. Add the milk and vanilla, stirring well.
3. Heat a large skillet and add a little oil. When the skillet and oil are hot, drop the mix onto the pan to form circles. When golden-browned underneath, flip over. Once browned on both sides, remove to a plate.
4. Serve topped with a little vegan margarine and a drizzle of maple syrup.
